Thanks to the high altitudes and the fact that traditional varieties such as Typica and Bourbon are still grown here, the region has had a strong reputation within the specialty coffee industry. Los Altos is unique as a lot of traditional practices are still used and preserved; coffee plants are grown under the shade and protection of other tree species, promoting biodiversity and resilience for the plant.

Ensambles have field technicians on hand to train coffee farmers in the region, helping them better understand agronomic practices, harvest and post-harvest processes, and more environmentally responsible production systems. Ensambles aim is to help position the region within the specialty niche, improve the lives of the families living in the region and to better prepare in the face of climate change.
